OMT courses in this cluster are specifically designed for business owners, production managers and QA/QC managers in the agri-business and food processing industry. Participants are equipped with key concepts, principles and standards of food safety and hygiene, learn to apply these principles and standards in their productions of foodstuffs to meet the general safety and hygiene requirements of the domestic and export markets.

Lead Trainer: Huynh Le Tam
Ms Huynh Le Tamis senior trainer and consultant in capacity building for organizations in the public sector and an expert in quality management systems.
During 2000-2005, Ms Tam was Quality Assurance Expert cum Head of Quality Assurance Unit for the Seafood Export and Quality Improvement Programme – Phase 2, jointly executed by the Ministry of Fisheries (MOFI) of Vietnam and Danida of Denmark. During 2007-8 Ms Tam was long-time consultant to EU and the FAO to set up the Food Standards and Quality Control Agency of Cambodia. In 2009 she provided technical assistance to 18 fish and fishery product processing factories under the Myanmar Fishery Products Processors & Exporters Association (MPEA) to meet EU food regulations.
Ms. Tam is also a recognized auditor for the Aquaculture Certification Council (USA). During 2007-2009, as the only active ACC auditor in Vietnam, she audited the following farms, hatcheries and seafood processing factories, qualifying their products for ACC certification for sales in supermarkets in the US: Truc An Seafood (Khanh Hoa province); Incomfish (HCMC); Amanda Seafood (Dong Nai province); Cadovimex, Minh Phu Seafood (Ca Mau province); Grobest (Bac Lieu province); Phuong Nam Seafood (Soc Trang), BIM (Kien Giang province).
Ms Tam graduated from Galatzi University (Rumania) and holds an MBA with double specialization in Management of Technology and Int’l Business.
